Parmesan Chicken Pasta

Parmesan chicken pasta with made with green beans, and spaghetti pasta noodles.

For the sauce, you can use any traditional pasta sauce. My choice, is usually Prego Traditional or Trader Joe's Traditional then I add mushrooms, onions and seasoning.

Try with Mozzarella cheese or Almond cheese!


For Chicken:

4 chicken breasts (1 pound)

1 cup gluten free flour

1 cup dried breadcrumbs

2 ounces grated parmesan cheese, divided (about 3/4 cup)

2 large eggs

2 tablespoons almond milk (unsweetened)

1/4 cup canola or vegetable oil, plus more as needed

4 cups traditional (marinara) sauce, warmed, Trader Joe’s traditional

1/2 bunch fresh basil leaves

1/4 cup of parmesan cheese

Salt and fresh ground black pepper

For Sauce:

1/4 cup of mushrooms

1/4 cup of onions

Salt and fresh ground black pepper

For Pasta:

16 oz spaghetti pasta

Prep Time: 30m

Cook Time: 40m

Total Time: 1hr 10m

Serves: 4


For Chicken:

  1. Place a chicken breast onto sheet of wax paper. Lightly season both sides of each chicken breast with salt and pepper.

  2. To prepare a breading station, you will need three additional dishes — use round cake pans or pie dishes. Add flour and a pinch of salt to the first and mix well with a fork. Crack both eggs into the second dish then add almond milk. Use a fork to beat until frothy. Add breadcrumbs, 1/2 of the parmesan cheese and another pinch of salt and pepper to the third dish and use a fork to mix well.

  3. To bread chicken breasts, dredge chicken in seasoned flour, and then dip them in the egg wash to coat completely, allowing excess to drip away from the chicken and back into the dish. Finally, dredge chicken in the breadcrumbs. Place breaded chicken onto clean plate or baking sheet.

  4. After breading chicken, prepare a large pan (to place four chicken breast) add olive oil. Once oil is heated, add breaded chicken, to pan-fry golden brown, for four minutes on each side. Chicken will not be fully cooked therefore you will need to place chicken in the oven (should be heated to 350 degrees) for 15 minutes.

For Sauce:

  1. Preheat oven to 350 degrees. Spread pasta sauce on the bottom of baking pan, add 1/4 cups mushrooms, 1/4 cups onions, and seasoning. Place in oven for 5 - 7 minutes.
