Peanut Butter Banana Muffins

2 ripe bananas peeled

2 large eggs

1 cup creamy peanut butter

2 tbsp. honey

1 tbsp. vanilla extract

1/2 tsp baking soda

1 cup chocolat chips



  1. Preheat oven to 400 degrees. Grease muffin pan with cooking spray, or oil.

  2. Within a large mixing bowl, add all of ingredients - except chocolate chips. Blend until the mixture is just about smooth and creamy.

  3. Pour batter between the 12 muffins, filling the cups 3/4 full.

  4. Bake in oven for 12-15 minutes. Double check with knife or toothpick. I like to bake mine for 13:30 minutes, which give me just the taste I like.

  5. Let muffins, cool off for another 10 minutes then serve.
