Chicken Tortilla Chili

Ingredients:


3 1/2 cups of chicken broth

1 lb boneless skinless chicken breast, seasoned

1 14.5 oz can great northern beans, drained

1 14.5 oz can black beans, drained

1 yellow onion, diced

1 4 oz can mild diced green chilies

1 14.5 oz petite diced tomatoes, drained

1 15 oz can sweet corn

1 jalapeños, seeded and diced

3 garlic cloves, chopped

1 tbsp. salt

1 tbsp. black pepper

1/2 tsp papirka

1/2 tsp cayenne

1/2 tsp chili powder

1/2 tsp onion powder

1/2 tsp garlic powder


Toppings:


Sour cream

Avocados

Cilantro

Tortilla chips

Cheese, optional

Cook Time: 30m

Total Time: 50m

Serves: 8 bowls


Instructions:


Pour chicken broth and diced tomatoes, corn, beans, garlic cloves, onions, and jalapeños into a large saucepan. Add the following seasoning: garlic, chili powder, paprika, cayenne pepper, onion powder, salt and black pepper. Then in a separate pan, pan fry seasoned chicken breast for 5-6 minutes - medium heat - on both sides. Add, cooked and seasoned, chicken breasts to chili then cover with lid and cook on low heat for 20 minutes. Serve warm with tortilla chips, cilantro, sour cream and other optional ingredients.
