Italian Sausage Frittata

Try this yummy recipe the next time you host brunch! This Frittata serves six to eight people and is usually made with roasted potatoes or hash browns. Enjoy!


Ingredients


1/2 pound, maple Italian sausage

1-2 tomato, sliced

1 green bell pepper,1 inch-diced

1 onion, 1 inch-diced

1 cup spinach, 1 1/2 inch-diced

1/3 cup olive oil

Salt, to taste

Pepper, to taste

2 teaspoon minced garlic (2 cloves)

9 extra large eggs

1/4 cup milk (almond milk)

1/4 cups parmesan cheese

1 tablespoon salted butter

green onion, chopped, for garnish



Prep Time: 15m

Cook Time: 40m

Total Time: 55m

Serves: 6-8



Instructions

  1. Preheat the oven to 375 degrees.

  2. Place the green peppers, and onion on a pan. Drizzle with the olive oil, sprinkle with garlic, 1 1/2 teaspoons salt and 1/2 teaspoon pepper and toss well. Steam for 5-7 minutes. Remove from pan and put in large baking pan. Cook 1 cup of spinach for about 4 minutes then add to the large baking pan.

  3. In a large bowl, whisk together the eggs, milk, & seasoning.

  4. Once the streamed vegetables are all add to the pan and toss with Italian sausage. Pour the egg mixture over the vegetables and place six sliced tomatoes on top. Transfer the pan to the oven and bake the frittata for 20 to 40 minutes, until puffed and set in the middle.

*Optional: Sprinkle with cheese then bake for another 5 to 8 minutes.
