Southern Shrimp and Grits

Ingredients

For Grits:

2 cups chicken broth

2 cups Almond milk (unsweetened)

1/3 cup butter (salted or unsalted)

3/4 salt, or to taste

1/2 teaspoon black pepper

3/4 cup uncooked old-fashioned grits

1 cup shredded cheddar cheese


For Shrimp:

8 thick-sliced bacon strips, cooked then crumbed

1 lb uncooked medium shrimp, peeled and deveined (about 20 pieces)

3 garlic cloves, minced

1 teaspoon cayenne pepper

1 teaspoon onion powder

4 greens onions, chopped


Prep Time: 15m

Cook Time: 20m

Total Time: 35m

Serving: 4

Instructions:

  1. In a large saucepan or pot, bring chicken broth, unsweetened almond milk, butter, salt and black pepper to a boil. Slowly stir in grits. Reduce heat to low. Cover and cook for 11-15 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm.

  2. In a large pan, cook bacon over medium heat until crisp. Remove to paper towels with spatula. Saute the shrimp, garlic and seasoning (cayenne pepper, onion powder, salt, black pepper) in pan until shrimp are light pink (4 minutes). Serve with grits and garnish with green onions.
