Zuppa Toscana

Re-create Olive Garden's famous Zuppa Toscana with all organic products from Trader Joe's.

Zuppa Toscana is an original soup from Olive Garden! Of course, It goes great with bread sticks but I enjoy mine by itself. See ingredients below.


This recipe is made with chicken sausage instead of pork! Try without meat or any other substitutes!

Ingredients

10 ounce, organic tuscan kale

13.5 ounces, organic coconut cream

4 cups, chicken broth organic free range

5 cups, water

1 ½ tablespoon, olive oil

1 lb, sun dried tomato-basil chicken sausage (Trader Joe’s)

1 yellow onion

1 4 pound, potatoes (7 to 8)

2 gloves garlic

Red pepper flakes

Salt

Black pepper

Red pepper


Prep Time: 30m

Cook Time: 40m

Total Time: 1hr 10m

Serves: 8


Instructions

  1. In a large pot, cook potatoes in water for 15-20 minutes to soften.

  2. In a separate pot, pour 5 cups of water, 13.5 ounces of coconut cream, chicken broth, seasoning, onion, chopped, and garlic gloves. On a simmer, let boil for 15 – 20 minutes while potatoes are softening.

  3. Once potatoes have soften, pour out water, let them cool off, then dice into 1-inch cubes. After cutting all the potatoes put into mixture. Then put whole bag of kale into soup.

  4. Pan fry chicken sausage or substitute in separate pan before putting in the soup mixture. Cut sausage into 2-inch pieces, lightly season, fry until brown. Once cooked, pour chicken sausage into soup.

  5. Let soup simmer for another 15 minutes. Then serve and enjoy.
