Ingredients

1 Red Onion

12 oz. Steak Strips (or choice of meat)

3 French Rolls

2 Roma Tomato

3 teaspoons of Taco Seasoning

3 oz. Shredded Mozzarella

½ Red Pepper, sliced thin

1 Lime

1 teaspoon of Olive Oil

Salt, to taste

Black pepper, to taste

Garlic, to taste

Prep Time: 30m

Cook Time: 20m

Total Time: 50m

Serves: 2-3

Instructions

  1. Prepare meat and vegetables. Chop the red onion, red pepper and slice it into thin strips. Core the tomato and cut into dice size shapes. Mine cilantro. Separate steak strips into a single layer then season.

  2. Caramelize the Onion and red pepper. Place a large non-stick pan over medium-low heat. Add 1 tsp. olive oil, sliced red pepper and onion to hot pan. Stir occasionally until lightly caramelized, 15-20 minutes. While onion and red pepper caramelizes, toast rolls.

  3. Toast Rolls and Make Pico de Gallo. Separate rolls into halves (add butter and garlic to bread). Place directly on oven rack, face down. Bake until toasted, 3-5 minutes. While rolls toast, combine tomato, finely chopped onion (to taste), and half the cilantro in a mixing bowl.

  4. Cook Steak and Finish Dish. Once onions caramelize, turn heat up to high, and add steak strips to pan. Stir occasionally until no pink remains on steak, 4-6 minutes. Top with cheese and remove from burner. Plate dish with French rolls, steak, caramelized onions, red pepper, and pico de gallo. Serve with French fries or potato chips! Enjoy!
